When you hard-boil an egg why does the egg white change color?

I was given reading and this wasn't even in it. So now i am supposed to write out an answer in essy format and I have no clue on why it does. Please help! I need this ASAP.

  1. All proteins, including those in egg white, are made of long chains of amino acids which are similar to beads on a string. In a raw egg, these chains are raveled up in a specifically arranged compact mass. Chemical bonds and interactions between the amino acids within each protein hold this mass in a specific shape and stop it from unraveling. As an egg cooks, the heat causes the bonds within the proteins to break, a process called denaturation. As these proteins chains unfold and entangle with other proteins, new bonds form between these amino acids and the amino acids of neighboring proteins, causing the texture to change.


  2. beacause your denaturising the enzymes that are in the egg white. enzyme has a certain structre.... when you put heat to enzymes.. they loose thier structure as in there active site is destroyed soo they don't work anymore

  3. you could be over boiling the egg especially if the outer yoke looks blue instead of yellow
