When you make wine do you keep it warm or cold?

  1. depends upon the yeasts your using to ferement it, every yeast has an optimal fermenting temperature.  typically around 68 deg works.


  2. I think to ferment it should be at room temp or so......cold I think will inhibit the fermentation.

  3. Keep it at a comfortable room temperature. Good luck; I've heard that mulberry wine tastes kind of watery. (Not that I get to my mulberries before the birds and squirrels do.)

  4. One of the by-products of the fermentation is going to be heat, so you need to factor that in to how cool or hot of a room the fermentation is going on in.  Large wineries that make thousands of gallons of wine at a time need to have very elaborate cooling systems to keep the wine from getting way to hot.  If you are only making a few gallons of wine at a time, you won't have to worry too much about heat build up from fermentation.

    If you normally keep your home thermostat set in the upper 70's, you should consider having the wine fermentation happen in the basement where it is a bit cooler.  If you don't have a basement, consider keeping your home a bit cooler for the first 4 or 5 days while the primary fermentation is going on.  After that the fermentation will be producing a lot less of its own heat and you can afford to have the ambient air temperature be a bit higher.  Once you've completed fermentation and you've moved on to the clarification and aging phases, you should ideally keep the wine somewhere where the temperature won't go over 70 degrees.
