When you wilt lettuce what is that??

I've got instructions to follow 'Separate the outside leaves of the baby gem (leaving the smaller inner ones for salads) and very quickly sauté them in a pan of olive oil with a little salt and pepper - just enough to wilt them'

I know i must seem v dumb! but just wanna make sure i do this right...

  1. Make sure the oils not too hot and make sure you toss them around while you're cooking them .  They'll take no time at all, when they're soft they're done.  


  2. To wilt means to collapse - in this case, make them go soft and limp.

  3. it means when the leaves are limp
