When you wilt something - what is that? (baby gem lettuce)?

I've got instructions to follow 'Separate the outside leaves of the baby gem (leaving the smaller inner ones for salads) and very quickly sauté them in a pan of olive oil with a little salt and pepper - just enough to wilt them'

I know i must seem v dumb! but just wanna make sure i do this right...

  1. It just means to saute them until they start to loose -some- not all of their moisture. You want to be able to tell that it's still lettuce, not green slime. It only takes seconds if the oil is already to temperature!

  2. To wilt is when the crispy form of the lettuce leave, relaxes and lays almost flat.

  3. wilt simply means to soften .  

  4. To wilt means to collapse - in this case, make them go soft and limp.
