One for a comma, and I prefer two after a period, but one is acceptable if you are consistant.

Generally one after a comma and two after a period or other end of sentence punctuation mark.  The extra space aids in readability by perceiving the end of a sentence more easily.  See how the additional space stands out.

Make it seem longer by increasing the font size of all periods using the find and replace tool, type the essay in like size 12 and change all the periods to size 14 or so.
