Question:

Whenever I make my green bean recipe, I never have any left over. What is your "Wow" recipe for crowds?

I'm looking for more dishes because I don't wish to remain a one trick pony. My green beans are flat out awesome and I want to have more side dishes like this. At our get togethers at work, the supervisors supply the meat and we cook the side dishes. I'm looking for your dish that everyone loves. Please share your recipe!

  1. This is a dessert that everyone asks me for the recipe.  It is a sheet cake and will serve several people:

    GREAT COCONUT CAKE  

    1 box yellow cake mix

    Mix together:

    1 can cream of coconut

    1 can Eagle Brand milk

    1 lg. container Cool Whip

    1 pkg. frozen coconut

    Mix cake as directed on box.

    Bake in sheet pan.

    While cake is still hot, pour mixture of cream of coconut and milk over it.

    Punch holes so it will seep through.

    Refrigerate until cool.

    Top with Cool Whip and sprinkle coconut over it. Keep refrigerated.

  3. When I'm cooking my chicken in wine, people go "wow, this smells great" as soon as they walk in the house.

    Take a roasting pan and cover the bottom of it with de-boned chicken b*****s. Pour in 1.5 litres (or less if it's a small pan -- I always do lots because the chicken freezes and reheats well for lunches) of cheap white wine -- enough to cover most of the meat. Add a little salt and white pepper, if you like. I generally cook without any salt and let people add a bit if they want.

    Cover the pan with aluminum foil before putting the lid on. Cook for about an hour at 400 or so. I was going to say 'cook until done', because it varies with the elevation and oven, of course. As long as the chicken isn't putting out anything red when you pierce the b*****s, it should be fine. If you've done a couple of layers of chicken b*****s, you may want to pull it out halfway through, and switch the bottom layer to the top.

    Be aware that the alcohol burning off may cause your oven door to push open and slam close. Never mind this business about parties gathering in the kitchen *after* dinner. They gather in my kitchen *before* dinner, to watch the oven door pop open and slam shut. Hey, if it amuses them. Some ovens have latches to keep the door shut. If you have one of those, *don't* use it!

    I serve it with rice and a vividly coloured salad (lots of shredded carrots and radish slices and a bit of red, orange, and yellow bell peppers) because it would be very boring to look at, otherwise.

    A wise friend once told me that you eat every meal twice; first with your eyes and second with your mouth. That's why I try to make meals with a variety of colours that appeal to the eyes, too.

    If I find my grandmother's recipe for nut bread, I'll post it. That has received rave reviews, too. Unfortunately, I just moved and haven't found everything yet.

  4. A guaranteed winner... I precook fresh asparagus, cool, then wrap in small bundles( 3 or 4) with thin slices of procuitto ham, drizzle with olive oil, and pepper ( no salt), and bake until done, maybe 10 mins.  

  5. My WOW recipe is my desserts. Here's a favorite among many.

    Tiramisu Brownie Squares

    1 pkg. (9x13) brownie mix, but ingredients to make cake like brownies

    1 c. milk

    1/4 c. instant coffee granules

    2 (8oz) containers of cool whip

    2 pkg. cheesecake flavor instant pudding

    20 oreos, coarsely chopped

    2 squares semi-sweet chocolate

    1/4 t. cinnamon

    Preheat oven to 350. Prepare brownie mix according to package direction for cake-like brownies; pour batter into greased pan and bake 25-30 min or until done. Remove from oven and cool completely. In lg. bowl comgine milk and coffee granules. Stir with whisk until disolved. Add 8 oz. of cool whip and all of pudding mix; whisk until smooth. Fold in chopped oreos. Spread evenly over brownies. Top with remaining cool whip and grate chocolate over cool whip. Sprinkle with cinnamon. Refrigerate at least 30 min. Cut into squares and enjoy :)
