Where's the best place for a posh saturday brunch in Brighton (UK)?

it's a friend's birthday tomorrow and out of the kindness of his heart he's waking up early to help us move a sink. we want to take him out for a special brunch to say thanks and happy birthday. Something trad and eclectic. Any recommendations?
