There are many types of bonsai.  Some are of an evergreen pine stock, some are herbs or normal house plants that have been grown in the 'bonsai' look.  You should decide which you like best.  The 'true' bonsai that everyone thinks about, unfortunately, are rather fragile.  If you like how they look, perhaps thing about getting a non-evergreen bonsai to see if you can keep it alive and prune it correctly.

Just a warning from a long life and much experience. Bonsai are really quite difficult plants to maintain. If it's for yourself then get in touch with your local bonsai club. If it's for someone else try and think of an alternative gift.
