If you're looking for very authentic, my boyfriend (who's half-mexican) swears by this stand on the corner of Canyon Rd and 89th - right off Hwy 26.  It's also right next to a pretty fun Mexican dance club.  Be prepared for a huge variety, including brain tacos --- not at ALL my favorite --- and I think it's only open from about 9-midnight Wednesday - Sunday

The Original Taco House is pretty good:  3255 NE 82nd Ave.
