Ive been there several times and it really depends on what you are looking for.

Just plain beautiful places

Aix-en-Provence/Arles/Gordes (and the Senanque Abbey which is just about 2 miles down the road)/Roussillon/Nice

Roman Architecture and History

Marseille/Nimes/Orange/ Pont du Gard/ Avignon (Pope's Palace not roman architecture but famous for its architecture and history regardless)

Beach

Nice/St Tropez/Cannes/Antibes

If you were limited and interested in a mixture of the best I would do

Aix-en-Provence/ Avignon/ Marseille/ Nice

I have seen these in October 2007 - the weather was superb and I remember them quite well:

1. LES CALANQUES - the flooded valleys of some ancient rivers, you must take the boat from Marseille to see them (3 1/2 hours trip on the Mediterannean Sea along the coast), navigating close to CHATEAU D'IF (yes, correct: the prison from MONTE CRISTO... AL. DUMAS)

2. MARTIGUE - "the French Venice" - water channels, beautiful houses, silence, those special colours of PROVENCE

3. BARAGE BIMONT - a great dam - with a spectacular vue to Mt. St Victoire (a real symbol of Provence).

4. LE PANIER - the oldest part of Marseille, you can visit walking or you can take a little train.

5. CATHEDRAL NOTRE DAME DE LA GARDE - in Marseille, dominating the whole city

6. VIEUX PORT (the OLD PORT) OF MARSEILLE - with many restaurants and boats

7. PALAIS DE PHARO - in Marseille

8. LA CATHEDRALE de SAINT MAXIMIN (close to AIX EN PROVENCE) - it is said that the relics of Mary Magdalene were preserved here

9. La ROTONDE de AIX EN PROVENCE

10. the Medieval part of Aix en Provence - the cathedral of the Holy Saviour (the cloisters - especially)...

and many many many other nice places

5. The "Canal du Midi": you hire a boat and you drive for some days far from the noise...

6. all the country between Marseille till Nice.

7. Millau : one of the highest bridge in Europe.

8. The city of Carcassonnes : july 14th, the greatest "feu d'artifice" in France!
