  1. we use regular flour in Australia for baking cakes. There is a brand carrying cake, bread, pasta, speciality flours now...it's Anchor brand. But really, either a good plain or self raising flour depending on your recipe, should do the trick.


  2. Hi, Tacoma, WA here.  It is easy to make your own cake flour:

    Put two level tablespoons of corn starch in a one cup measuring cup, then fill with all-purpose flour.  Sift three times and use as needed.  

    Never overmix your batter because this also develops the gluten.

    The corn starch reduces the amount of gluten in the flour, which is the protein part of it, and what makes bread dough elastic and stretchy, but it also makes cakes tough.

  3. Cake flour can be found at any large grocery store in the baking aisle. It's called "Swan's Down" and is in a red box with a white swan on the front.

    Pastry flour is harder to find.
