Where can I buy/get a one tonne Mushroom Anchor.. Any help would be appreciated.

Obviously this is for a MOORING and not to be used ON the boat.  The best thing you can use for this is an old Engine block (heads removed and pressure washed or steamed clean) or however many it takes to give you the 2000 pounds.  Take them out to where you want the mooring and drop them into the water one at a time... then get in your SCUBA GEAR and go down an CHAIN THEM TOGETHER with a good, high quality stainless steel chain.  

    This may seem like a lot of work, but it's cheaper than having a 2000 pound mushroom anchor made from concrete or steel and it works just as well.  Many, if not most of the moorings you will hook onto in the Caribbean use some version of this ElCheapo anchor

  3. I've never seen a 1 ton mushroom.  I don't even know if they are made.  The biggest I've used was 500 lbs. and it was a sandy bottom..   I moored a 42 ft. Gulgstar and it took some pretty high winds, with no problem.  I was more worried about the mooring buoy and chain swivel!   Good luck!
