Where can I buy quajada?

I'm doing a Spanish project where I have to make a food from a Spanish country. My country is Nicaragua and I decided to make Picos, but I'm not sure how to go about buying the cheese quajada. Where can I buy it? (Is it available in any regular food stores such as Giant or Wal-Mart?) Or, if I could substitute the cheese for something else, what can I substitute it with????

  2. The only times you'll find it in major local stores (like Wal-Marl) is if the neighborhood is established as majorly hispanic.

    Your best bet is to go to a Mexican market or grocery store. In many neighborhoods you can even ask people if they know of Nicaraguan or other ethnic stores. Anyway, in the Mexican markets just look through the cheeses; you might find a cheese that is similar or exactly like Nicaraguan quajada but by a Mexican name. Good luck!!!
