This is a soft, mild, spreadable cheese characteristic of the Emilia Romagna region of Northern Italy. It is a key ingredient in the flat bread toppings for Piadine (similar to tortillas, but chewy and slightly thicker). I can't find it anywhere. Maybe a substitute?

  1. The "Scquacquerone di Romagna" is a highly perishable cheese, and I doubt that there are any importers to the US due to its perishability.

Mona Lisa in San Diego (2059 India St.) has a wide choice of cheeses from Italy, maybe you could ask there.

  2. If you haven't already, try Trader Joe's.

Try Casatella cheese if you can find that instead.
