  1. It's basically the same but Lechon Macau uses more into the Chinese influence of spices (five spice) of the dish. Afterall the Chinese cuisine has some influence on Filipino cuisine.

    I havn't seen any recipe for Lechon Macau but I use the recipe for Chinese Crispy Roast Pork, Siew Yuk, recipes. To make Lechon Macau. The only thing they're roasted broiled in an oven & they're crispy. Haven't fried it maybe you can try. Google recipe online.

    Or are you talking about left over lechon pieces making it into stew. The one you add whatever you want as long you put Garlic, Ginger, and any of the following Orange Hoisin, Lechon Sauce, soy sauce and Oil. tsp brown sugar to sweeten more. Depends what style your trying to achive its taste.

    You also can add Pad Thai Sauce. You peel and crush half a head of garlic and finely slice a large onion. You heat about 3 tbsp. of peanut oil and saute the garlic and onion. You add the chopped lechon kawali and cook until heated through. Add mix in pad thai sauce.
