Try the shipbuilding industry, there are many marine design engineers that are in search of work.  Where are you and how fast do you need it?  Try the boat shows in your area.

What makes you think a Yacht Designer will be interested in redesigning your interior? They will refer you to an Interior Designer specialising in Yacht Interiors.

In your case I'd suggest what you really need is an interior designer.  Yacht (marine architects) designers are very good with hulls and general layouts, but interiors not there forte'.   If you are thinking of moving bulkheads, I'd advise against it.  The structure of the hull isn't like a house, it's designed to give strength to the over all integrity of the hull.  Bayliner introduced interior designers to the boating industry in a big way in the 1980's.  Quickly adopted by everyone else.  Check your local phone book for local listings, and be sure you ask it they have done boats.  Only a few boats undertake changes like this, mostly upgrading the lounge or galley.   Good luck!
