Where can I find information on apprenticeships for chefs abroad, especially Italy?

I'm a 26 yr old changing career from the office world of recruitment to cheffing. I'm currently coming to the end of my 1st year of catering college and am considering get more hands-on instead of moving at a slower pace for another 2 years.

I think it depends on what country you are applying from. If you are already living in the EU, then you won't have many visa restrictions. I would suggest contacting the Italian embassy in your country to see if they can offer any suggestions to programmes on offer, or additional courses that would lead to employment. Another option is start working for an international hotel chain that would allow you to work around the world.
