Where can I find pasteurized eggs in London? (Preferably NW8, W1, NW3)?

Sorry...I am reading several recipe books which involve raw eggs and they all mention pasteurized eggs. I remember finding them in the US but not here. Dont ask me about how they do it :) I imaginged the same thing you said, but then in the US, they are actually look like normal eggs (and liquid inside).

  1. US recipe always stipulate pasturised eggs in recipes using raw eggs (chocolate mouse, maoynaisse etc) because the US has a higher rate of salmonella in eggs than here in the UK. As the UK vaccinates every chicken against salmonella before they start laying, salmonella is virtualy non-existant  in UK eggs. This means that you can use regular UK eggs in any recipe. Go for eggs with a Lion brand stamp from a large supermarket to be on the safe side. Eggs without a lion brand stamp are often sold from smaller corner stores of independant supermarkets, and are often imported from Europe where the rules on vaccination are not so strict.


  2. Can you get pasteurised eggs at all?

    Pasteurising milk involves heating it to (AFAIR) 76 degrees for a short time. If you tried to do this with an egg, the centre wouldn't reach the required temperature without cooking the outside.

    Just get a hard-boiled egg, if you are that worried about lysteria etc.

  4. As Amber's answer is indicative of the development of egg production in the UK has simply not reach as far as that of modern countries.

    According to a new EU survey from the European Food Safety Agency (see source) the UK has nothing in particular to boast about regarding the number of infected chickens in the egg production.

    In fact the most "secure countries" in that regard is the Scandinavian where, by the way, it is possible and strongly recommended to buy pasteurized eggs when they are needed raw.

    Until the supermarkets in the UK begins to supply pasteurized eggs you just have to take your chances :-)

    Because they're pasteurized before you see em!

    Sorry couldnt resist. Do you mean in a powdered form? I have never heard of pateurised whole eggs sorry & didnt know that it was possible - surely the eggs would explode?
