Where can I find the best beef rendang in Malaysia?

I’ve been told Malaysia serves up some of the best beef rendang. Can someone tell me where I can find some and what ingredient do you think makes this dish so special?

  2. In one's home.  That would be impossible to find.  "The Best Is Yet To Be". Every one likes to say that his/her mother cooks the best rendang.

  3. Beef rendang is one of my favourite. Its a must have dish on every special occasion. It can be eaten with Nasi Lemak, Lontong, Briyani rice, sticky rice etc.

    I disagree with Imar's answer on Chef Ismail's Rebung Restaurant. If she truly have been to that restaurant personally, she would not name it as having the best of anything possibly edible. But if u must give that restaurant a try, go there around brunch time where everything is still fresh otherwise do not bother. I will never return to that tasteless waste of time and penny restaurant.

    To me the best beef rendang could either be a normal beef rendang or something that is called rendang tok (also beef rendang). A good beef rendang should be somewhat gives u the almost melt in the mouth feeling. A bad rendang would be the hard beef that u may have to chew with great effort. I learned that the softest part of beef to use for rendang would be the knuckle. Ive also tried using the eye round and the result is the same. But theres a special way of slicing the rendang so that to avoid the hard chewy texture. Ginger is a must ingredient to tenderise the meat further and much quicker.

    U can find beef rendang in almost every corner you turn in Malaysia easily. Above restaurants are just a couple of example I could give u.

    A darn good rendang depends on a darn good kerisik. Nowadays there are plenty of instant kerisik being sold in the market. But the best kerisik will be those that u may have to make yourself. Kerisik is actually a finely shredded coconut - browned without oil in a wok. The art of turning it evenly browned and light in texture is to keep stirring it endlessly which is time consuming. Thats why most people use the instant ones but they fail to realise that those instant ones made the rendang taste like an instant rendang instead of an authentic ones. Once the kerisik is dark browned, chuck them in the blender, use very little oil to blend them. Blend until it became a very hot oily paste. The more kerisik u use, the tastier the rendang will be.

  5. Hi curtis! my grandmother in-law cook's good beef rendang. She is from the historical state of Malacca. She's a straits born chinese (Nyonya), she cooks very good nyonya beef rendang and other nyonya dishes.

  6. One thing if you want to try the traditional one, try to go at the nasi lemak stalls, if you have time the best place to try is in the state of Perak. They are well known with their rendang tok. Or else on saturday nite, go to Jln Tunku Abd Rahman in Kuala Lumpur, there is a nite market there and they normally sells this rendang tok! Or elseChef Ismail Rebung's restaurant should have this dish prepared the traditional way..

    INGREDIENTS

    3/8 pound shallots

    3 cloves garlic

    15 dried red chile peppers

    5 slices fresh ginger root

    5 lemon grass, chopped

    2 teaspoons coriander seeds

    2 teaspoons fennel seeds

    2 teaspoons cumin seeds

    1 pinch whole nutmeg

    1 tablespoon vegetable oil

    1 1/4 pounds beef stew meat, cut into 1 inch cubes

    1 1/2 tablespoons white sugar

    2 cups shredded coconut

    5 whole cloves

    1 cinnamon stick

    1 2/3 cups coconut milk

    7/8 cup water

    salt to taste

    DIRECTIONS

    Heat the coconut in a dry wok, stirring continuously until golden brown. Set aside to cool.

    Using a blender or a food processor, blend the shallots, garlic, chilies, ginger, and lemon grass to a thick paste.

    Grind the coriander, fennel, cumin and nutmeg.

    Using the wok, fry the shallot paste in a little oil for a few minutes. Add the ground coriander, fennel, cumin and nutmeg; cook for 3 to 4 minutes, stirring continuously. Add beef; cook over a medium heat for a further 3 to 4 minutes, or until meat is browned.

    Stir in sugar, coconut, cloves, cinnamon stick, coconut milk , and water. Bring to a boil, lower heat, and simmer until most of the liquid has gone and the meat is tender (about 1 hour). Season with salt to taste. ummm......yummy!!!

The best beef rendangs are always cooked at home...no matter what anyone else tells you, store bought just never tastes the way it does as when it is made at home with love and quality ingredients. Personally, as we all do, I think my mum's is the best.  After all beef rendang is a labour of love, as it takes alot of time to cook over a low heat in order to make the dish. The single ingredient that makes all rendang special is 'kerisi', or the toasted and rendered coconut flakes that go in it that give it a nutty and rich flavour. I hope that helps.

    i guess it's special cause it's spicy...n we malaysian love spicy food. my grandmother is a pure 'baba nyonya'. go google if u r wondering what's 'baba nyonya'. m still mastering her cooking skills. n m not a pro to tell u the ingredients. if u come by, she'll cook more than that for you.

    Regarding your qn, I can sum up and say that the best is always home-made. Of course, the best time for you to find and enjoy beef rendang and other types of rendang is during the Eid Mubarak Celebration and it will be like a feast of sumptuous rendang you ever tasted almost everywhere you go in Malaysia especially in Perak, Negeri Sembilan and Malacca. So, I really hope this visit of yours will not be the last to this interesting country and do come during the celebration in October. You do not even need to introduce yourselves to enjoy the feast especially 'the rendang' ..you are always welcome.

  19. Let's just say there is many 'the best' rendang in Malaysia,

    It's like saying "My mama cook the best pasta".

    It's rather a subjective question. There are a few good rendangs in every little town.

    However, I agree that the BEST time to go around and taste all the different kinds of rendang is during the Ramadan month.

    You can find these kind of 'pasar' -markets- around the whole day (until 7pm, when they 'buka puasa' -break their fast-)

    All you have to do is ask the locals for the best and all the 'Makcik' -aunty- and 'Pakcik' -uncle-

    I used to help my mother to cook this beef rendang and honestly, that is the best beef rendang I ever taste.

  25. you can get rendang on almost every turn and corner around malaysia, but the best one are the one that served only by those tradisional chef in kampung (villagers)

    This dish is special due to its ingredient which used mainly local spices and the way they cook this dish. The longger time you spend to prepare and cook the dish, the more proper it will taste. You will have a variety taste out of this dish simillar as malaysian with lots of people,culture and tradision

    Serai30%

    Red Onions20%

    ginger10%

    dried red chili 30%

    Lenkuas 2 %

    Cooking oil any 100gms

    You Blend them and cook until oil surface

    For every kilo of meat 2 coconut (milk)

    add a fried coconut meat

    cook until it' dry wet

    salt accordingly

    In malaysia a kilo of cook beef rendang cost rm35/- per kilo.

  29. 1/2 Cup Oil

    3 cm (1 1/4 in) Cinnamon Stick

    2 Cloves

    4 Star Anise

    2 Cardamom Pods

    500 grams,(1 lb.) Topside Beef, cubed.

    1 cup thick Coconut Milk

    1 Slice Asam Gelugor, or 2 teaspoons dried Tamarind Pulp soaked in warm water for juice.

    2 fragrant Lime leaves, very finely sliced.

    1 Turmeric leaf, very finely sliced.

    2 Tablespoons Kerisik,(see Helpful Hint below).

    1 1/2 teaspoons sugar

    Salt to taste.

    2 Shallots

    2 cm (3/4 inch) Galangal (from Marks & Spencer !!!)

    3 Lemon Grass

    2 Cloves Garlic

    2 cm (3/4 inch) Ginger

    10 Dried Chillies

    1) Chop the spice paste ingredients then puree in a blender until fine.

    2) Heat the Oil in a Pot on a Medium setting until hot, then turn down to Low and add the Spice paste, Cinnamon, Cloves, Star Anise, and Cardamom and cook for 5 minutes. If it starts to burn, add a tablespoon of water.

    3) Add the Beef, Coconut Milk and asam gelagor or Tamarind juice.

    4) Simmer uncovered, stirring frequently, until the meat is almost cooked.

    5) Add the Lime and Turmeric leaves,kerisik,sugar and salt.

    6) Lower the heat and simmer until the meat is really tender and the gravy has dried up.

    Approximate cooking time is 1 to 1 1/2 hours.

    7) Helpful Hint :-

    Kerisik is ground coconut.

    To prepare the kerisik, roast 10 oz,(300 g) of fresh grated coconut, either the traditional way in a dry Wok,stirring constantly, or in a slow oven until brown.

    Then grind finely, preferably when hot, because then it's crispy and easier to grind. Coconut oil may be produced if the coconut is old, in which case, simply combine it with the ground coconut.

  31. the best beef rendang in the whole wide world you can get in Rembau, Negeri Sembilan. Negeri Sembilan is 1 of the 14 states in Malaysia. The corect balance bertween chilllies and coconut milk makes this dish superb!
