  1. All sheet music can be converted pretty much exactly. However, if you do that your music will sound very flat and uninspiring, like most Midi tracks.

    You need a real person to make the timings feel natural, and to bring out the details in the melody.

    You can import Midi tracks into something like Cakewalk or Cubasis and see the frequencies and durations.

While the previous comments are roughly true - that notes mean frequency and duration and it takes a human to make it sound good - the situation is actually far more complicated than that because the relation between the notes is messy and yet people can sight read music and hear relationships of octaves and notes.  Further, a musician may read a set of notes but play different notes - transposing the song - in order to work with other musicians or singers.

      The interval a note is played consists of at least 4 things - the metrical timing suggested at the top of the music, the beats of the measures given at the beginning of each staff (3/4, 6/8), the lengths of the notes with their modifiers, and finally, the way the musician feels the notes should fit together.  And the last is adjusted on the fly throughout the piece.

      Take a look at musical notation rules to see how complicated it gets when notes start sliding into each other, etc.
