Check Usborne Books - they have some great activity, art and craft books for kids of all ages. Get a good reference book, like the Big Book of Playtime Activities to have on hand for those rainy days!  http://www.ubah.com/g2687

There is a website called http://www.childcarecentral.com where you can search for activity ideas for preschoolers by theme.  I think there's over 150 projects/activities there.  You do have to sign up as a child care provider to view the themes though (but this is FREE)

There are also probably some great books with easy to do activities at your local library.

I am a Children's Librarian working with the 1-3 year group.  I get most of my ideas from these two websites:  http://www.perpetualpreschool.com/

You can subscribe or not (I don't) and they have great, easy crafts on a myriad of subjects.  

    Another thing I do is Google the particular craft I am looking for, i.e. Penguin craft for toddlers.  You can also Google whatever materials you have, i.e. toilet paper roll penguins.

   Craft books, as someone else recommended, are also a nice idea because you can browse the pictures with your little one to choose something.  Have fun!
