There was a restaurant a little to the left of St. Louis Cathedral called "The Gumbo Shop" that had a really nice white bean dish.  But I haven't been since before Katrina, so who knows if the're still open or not.

I'm sure you could google "New Orleans vegetarian" and find a site dedicated to that.
