  2.    to do that you need to go to a small butcher shop as the chains get all their meat in boxes and couldn;t get a whole carcass for you.

      remember if you buy a whole carcass either pork or beef you will pay for all the trim that you can;t eat, like all the fat and bone that comes with it.

      It comes with all the extras that you don;t see in a meat shop or chain store as it is taken off before it goes into the meat case. all the watse costs money that you will lose when buying whole, plus you will get lots of  cuts of meat you might not like.

      My best advice is what I tell many people and that is what you like in pork or beef you wait until it is on sale and but lots of it and freeze that way you will have it trimmed and also get what you like to eat.

  3. Most decent butcher shops will divide the animal of your choice into manageable joints if you pre-order.  People do this to stock up their freezers.  If you order a whole animal (cut up, of course) it often attracts quite a discount.
