i would like a free video capture (from screen/desktop) application that can capture audio and video that isn't crappy and without a trial limit.

Camstudio may what you are looking for. Another screen recorder called DemoCreator, which might be the easest tool to record your screen with audio. If you don't mind using it with the water mark and trial limit, the trial version would be right for you.
