  1. INGREDIENTS

    1/2 onion, chopped

    1 green bell pepper, chopped

    1 bunch green onions, chopped

    2 jalapeno peppers, chopped

    1 tablespoon minced garlic

    1 pint cherry tomatoes, quartered

    1 (8 ounce) bottle zesty Italian dressing

    1 (15 ounce) can black beans, drained

    1 (15 ounce) can black-eyed peas, drained

    1/2 teaspoon ground coriander

    1 bunch chopped fresh cilantro

    DIRECTIONS

    In a large bowl, mix together onion, green bell pepper, green onions, jalapeno peppers, garlic, cherry tomatoes, zesty Italian dressing, black beans, black-eyed peas and coriander. Cover and chill in the refrigerator approximately 2 hours. Toss with desired amount of fresh cilantro to serve.

  3. Texas Caviar

    2 c Dried black beans

    1 Ham hock

    Salt and pepper; to taste

    1 tb Oil

    1 Onion

    2 Green peppers

    3 Tomatoes

    - peeled, seeded and chopped

    PLACE THE BEANS in a pot and fill it with water 4 inches above the beans.

    Add the ham hock, cover and place over high heat. Bring to a boil, reduce

    heat to low and simmer for 3 hours. Add water as necessary during the

    cooking so that the beans are always barely covered. Remove cover during

    the last hour and let the liquid thicken a bit. Add salt and pepper at the

    end. Meanwhile, heat the oil in a skillet, add the onion and peppers and

    cook until soft, about 7 minutes. Add the tomatoes and cook another minute.

    When it's time to serve the beans, mix the onion, pepper and tomatoes to

    the beans.

    ~Texas Caviar~

    2 (14-ounce) cans Black-eye peas drained

    1 (15 1/2-ounce) can white hominy drained

    2 Medium tomatoes, chopped

    4 Green onions, chopped

    2 clove Garlic, minced

    1 Medium-size green pepper, chopped

    1 Jalapena pepper, chopped

    1/2 Chopped onion

    1/2 cup Chopped fresh cilantro

    1 (8-oz.) bottle commercial Italian salad dressing

    1 can Chopped green chilies & tomatoes

    Instructions:

    1. Combine all ingredients except salad dressing; mix well.

    2. Mix salad dressing and green chilies and tomatoes and pour over black-eye pea mixture; cover and refrigerate.

    3. Add salt and pepper if desired. Enjoy!! :)
