Towards that area of NCR that borders Rajasthan, beyond Palam, Dwarka and just keep going along the Delhi-Jaipur highway, preferably just across the border. There you can sample both the glitzy/improvised and earthy, with-the-folks-type of varieties of dal bhati and choorma, with the real ghee. Thumsup + lassi shake in tall glasses with finely crushed ice would surely burp up your appetites.

In Delhi, however, you won't get the best outside the family kitchen.
