Where can i read about Carribbean originated flan and fried plantains?

I'm doing a spanish project where i have to research the history and origina of flan and fried plantains... are there any natives from the Caribbean that can help me out?

Flan originated from the boarders between France and Spain.  Undoubtedly the spaniards brought it to Latin America.
