In milkshake, blend and mix with mayo as dipping sauce or bread spread, dip with palm sugar and eat it, go with pickled ginger, used in sushi handroll or sushi, use in cream soup, the popular indonesia avocado with coconut milk and palm sugar drink, add to congee as substitue for century egg.


  2. You can use avocados in many different recipes,  my favorite being guacamole .

    You can make guacamole dip with chips or vegetables and nacho's.

    I've even seen some people go crazy and make "Avocado Shakes"

    Never have had one so i won't judge but you might want to try it.

    Chocolate Avocado Dream Pie

    Ingredients (use vegan versions):

        2 large soft avocados

        2 cups vegan chocolate chips

        1/8 cup plant milk, possibly more needed

        1 tablespoon vanilla extract

        liquid sweetener, add as much as you want depending on taste

        pre-made vegan pie crust

        raspberries

        1 tablespoon orange juice

    Directions:

    Ok, so I will be honest. I have never actually made this before. But I have had it, and it was awesome. Only problem was that they wouldn't give me the recipe, so here we are. I intend to make this soon, but as I am unsure what to do I thought I would post my ideas and let anyone post variations or comments, since it is a recipe in transition.

    That said, this is how I think it should be made, based on the one I had before.

    Take a pre made vegan crust and lay washe'd and dried raspberries along bottom of crust.

    In a double broiler melt chocolate chips with soymilk and vanilla. Add sweetener to taste. Mix well, and take off from heat after fully melted so that it does not burn.

    In a separate bowl mash up the avocado, or pulse in a food processor.  Add in orange juice, Get all lumps out.

    After chocolate cools a bit mix it in with mashed avocado. This mixture should be thick and creamy. Test the sweetness level.

    Pour over raspberries and place in fridge to set.

    Enjoy! Top with a vegan whipped cream topping.

    Maybe some agar agar is needed if anyone wants to try that out.

    Avocado Fudge

    Ingredients (use vegan versions):

        1 avocado, ripened

        1/2 cup vegan butter

        1 teaspoon vanilla

        1 cup cocoa

        3 cups powdered sugar or use powdered sugar replacement

        1/3 cup chopped walnuts, optional

    Directions:

    You don't even taste the avocado in it.  It's really amazing. Try it out and lemme know what you think. Also the fudge doesn't come out green, the avo is just used to give the creamyness to the recipe.

    In a medium sized saucepan, melt the margarine over low heat.  Once aoy butter is melted, puree with avocado in food processor or blender until perfectly smooth. Be sure there are no chunks of avocado left!

    Return mixture to saucepan over very low heat and add the rest of the ingredients, except the walnuts, adding the powdered sugar a portion at a time.

    Once all the sugar has been added, the mixture should be thick. Add walnuts if desired, and transfer to a loaf pan.  Refridgerate until firm. Now, be patient!  If you don't let it firm up, you won't be able to slice it up into squares.

    You can dazzle it up by sprinkling powdered sugar and nuts on top if you wish. Really its endless what you can do!  Have fun!

    Red Beans and Avocado Salad

    Ingredients (use vegan versions):

        4-6 whole wheat flour tortillas

        3/4 cup red kidney beans, cooked

        4 leaves romaine lettuce, sliced (or other greens like spinach, red lettuce, etc...)

        1 avocado, sliced

        1 small ripe tomato, diced

        your favorite homemade vinaigrette or a combination of

        oil, vegan red wine vinegar, shallots (or garlic), paprika,

        mustard powder and salt and pepper

    Directions:

    Mix all the ingredients of the salad. Roll the tortillas is cone, hold them with a toothpick and fill them with the salad.

    Serves: 2

    Simple Avocado Enchiladas

    Quick to make and so delicious!

    Ingredients (use vegan versions):

        1 bag shredded vegan cheese

        1 can red enchilada sauce

        1 1/2 large, ripe avocados, sliced

        1/2 onion, finely diced

        3/4 jalapeno or other mild pepper, finely diced

        1 small can black olives

        about 3/4 cup chopped cilantro

        any other ingredients you want to add (green onions, etc)

        12 tortillas

    Directions:

    Preheat oven to 350.

    In a large pan, heat up enchilada sauce till bubbling. Lower Heat and place first tortilla in the sauce. When you lift the tortilla with a spatula and the edges sag, it's ready to be taken out. Place to one side of baking dish (be conservative with space, you have to fit 12!) and fill the middle with all your goodies - lots of cheese, hearty slices of avocado, olives, cilantro, chopped onion and jalapeno, and anything else your heart desires.  fold two sides of stuffed tortilla together and viola! One down.

    I'll usually put the next tortilla in the sauce as I'm filling the cooked tortilla, but make sure it's not too hot or they will cook too fast. When you've finished all 12 enchiladas, smother them with any leftover sauce and top with any stuffing l

  8. Aside from sandwiches ... Try adding it to salads.  I've eaten it out of hand with salt & pepper.

    I've also made an avocado cold soup.  You could mash it, mixing in some chopped onions (red for me), pressed garlic, parsley or cilantro, and finally some chopped seeded tomatoes.  Mayo or sour cream, about a tablespoon should do.   Use it as a dip with pita chips.

  9. A simple salad, which is a summertime favorite for me is 2 diced avocados, 2 diced mangoes, and 6 slices of cooked rind-less bacon diced.  Add them all together and let the flavors infuse....it is REALLY refreshing!!

    OR~

    Just today for dinner I cooked one of my fave pasta dishes.  

    300 gms of chicken thigh fillet diced and cooked

    sauce ~

    250 ml of light cooking cream

    250ml of white wine

    6 chopped spring onions

    3 cloves of fresh crushed garlic

    salt and pepper

    a tbs chicken stock powder

    throw it all in together until the sauce thickens and reduces a little.

    at the last minute, stir through 2 mashed avocados and add the chicken that you have already cooked. Stir through your chosen type of pasta ( I always prefer penne) and serve. I promise this will rock your socks off!!!

  11. This may sound strange but it's really good, especially on a hot day. Blend an avocado, ice, and sugar together until it is smooth with little bits of ice. It's really simple and delicious!

  12. Avocado pasta with cashews! It's really good. Or, add it to your usual salad for a boost of good fat!

  13. Mush with lemon juice, paprika and salt for guacamole.

    Cube and toss with tomato, rocket, whatever else and a little olive oil, salt & black pepper for a yummy salad.

    It's great on toast with a little chilli oil or lemon and cracked pepper.

  14. Avocado maki rolls!

    Avocado shakes are good. You can just add them in to your regular smoothies. Or you can blend them up with a little milk or plain soy/rice milk and add a tiny pinch of salt to bring out the sweetness.
