Where can you buy carbonation at and why is it hard to find?

I'm an amateur chef and I need carbonation for a recipe but I'm having trouble finding where to buy carbonation at.

What do you mean carbonation? Do you mean carbonated water or just the CO2 gas that makes water into carbonated water?

How much to you need? They sell little canisters that people can use for like a home bar and they can usually be found with bar related stuff in stores. Especially ones like Bed, Bath, and Beyond, or William Sonama or even some other top end cooking stores too.

If you need more then you can contact soda distributor in your area and they can hook you up with a gas tank and a regulator. They will also be able to refill it for your.

I think what you're looking for is a foamer. I found a couple on the Williams-Sonoma website. You need to buy N2O cartridges separately.
