In terms of just sushi, its got to be Hiro Sushi on King st. east.  He's one of the few, if only, sushi chefs in the city to get fresh fish everyday.

Sushi on Bloor @ Bathurst & Bloor! But you have to make reservations if you plan to eat there during dinner time. (Particularly between 6-8 PM). Otherwise, be prepared for a long wait.
