Where could i find the compass settings to sail from the east coast of Australia, to the west coast of NZ,?

I think for actual research, you might look at the "Imray- Australian Cruising Guide" . It has very good Australian and NZ charts.

From anywhere south of Sydney, head east.  North of Sydney you will have to do a bit of south as well.

Try an atlas with Mercator's projection.  Land areas are distorted, but compass bearings are correct.
