Where do put quoted text when replying to someones e-mail?

Opinions differ but my own preference is to quote the part to which you are responding before your response:

He said

You responded

He said

You responded

So it seems like a conversation.

Keep trimming, as required, as the conversation continues.  Remove quoted parts that have lost their relevance.
