The idea of a real horse of many changing colors (a horse of a different color) came from the movie, 'The Wizard of Oz,' in which a horse was led through one scene while the color of its coat changed in unrealistic shades.  It was a visual pun played off of the phrase, which came into being on the racetrack.  Jockeys wear distinctive colors when they ride, and if a horse stays with one owner for a long time, it may be idealized that those colors are the horse's colors.  Usually a horse will prove its worth or not, and spend a short time being traded and a long time at one stable.  If a horse is traded a lot - or even not traded but simply loaned, the audience at a racetrack may be fooled into thinking that a new horse is presented every time, and may bet on a horse that they would otherwise have known was a loser.  Many games have been spun off of this and played on the poor audiences.  A horse of a different color is not to be trusted.
