Here is the recipe for Kentucky Chicken

2 ¼ lbs. broiler-fryer, cut up or chicken pieces

2 tsp. seasoned pepper

¼ tsp. curry powder

3 cups water

½ cup flour

1 tbs. salt

½ cup fine dry bread crumbs

2 tbs. seasoned sa1t

cooking oil for frying

2 envelopes instant chicken bouillon powder

Soak chicken pieces in water and salt in the refrigerator to make chicken extra moist. Chill for 1 to 2 hours. Grind seasoned salts instant chicken bouillon powders seasoned pepper and curry powder in a mortar and pestle or whirl in a blender until a very fine powder. Blend with flour and crumbs in a plastic bag. Shake chicken pieces a few at a time in flour mixture, while still wet, until thickly coated. Place floured pieces on cake rack to dry for 20 minutes. Heat cooking oil in a deep fryer or large frypan to 375 F. Fry chicken pieces, turning once or twice about 10 minutes on each side or until golden brown. Drain well on absorbent paper. Then, place all pieces on a rack in an ovenware dish; cover with tight-fitting lid or foil. For crisper chicken, do not cover the baking dish. Bake in the oven at 350 F. for 15 to 20 minutes or until chicken is fork tender.
