Where is a castle in germany that you can stay overnight?

i am visiting germany over christmas and am looking for an old authentic castle we can stay the night at, like a bed and breakfast...

There's a youth hostel on Burg Bilstein in the Sauerland. It's not too big, and accommodation is quite basic. But the view is beautiful and the region quite scenic. If you like hiking, here's the place for you to go!

There is one in Koblentz that overlooks the rivers.  There is another one in the Rhinefalls - it might technically be in Switzerland but its gorgeous.
