I think your best bet is Dominican Republic or Cancun Mexico.They have all-inclusive resorts and they are reasonable.

In Cancun the Palace Resorts are very nice. Not only are they all-inclusive but they offer some free excursions, in addition you can stay at one and visit the other resorts.

In DR, I like the beaches and resorts of Punta Cana. Any resort on Bavaro Beach will be wonderful. Riu, Iberostar, Melia, Paradisus or Barcelo Bararo Beach Resorts.
