I agree with Stella39...the Cozumel Palace is a good choice. I stayed at the Aventura Spa Palace in Riviera Maya two years ago...and it was fantastic. Palace Resorts are top quality! I've included a link I found that provides more details about the Cozumel Palace...

The Cozumel Palace is nice...  but has absolutely no beach!  You have to climb down very slippery rocks to get into the water.  They have free snorkle rentals, but when I was there last March, there really wasn't much to see.  

I liked the Wyndham Cozumel.  It has a really pretty beach and the atmosphere outside is just wonderful with the little hut-type rooms.  If you dive, Sand Dollar Sports is a great choice and they are on property.  The Wyndham isn't quite as "fancy" as the Palace, but it's also cheaper too.  I was there in December and plan on going back in August.

Coz Palace.  Right in the middle of everything.  Literally All-Inclusive!  High end liquors in the wells at the bar and in the in-room dispensers.  Incredible food (esp in the sit-down restaurants.)  Tours, and even most of your toiletries (biosilk brand hair care, razor and shave cream, toothpaste and brushes) are included.
