The Internet Chess Club is the premier site (www.chessclub.com) but you do have to pay for it.  It has everything from regular games at all time controls, to variants, to GM matches and anything else you are looking for.

If your rating is below elo 1800, the free internet chess server (FICS) is fine. Very little trash talk, and it's usually a sore loser who's accusing me of cheating and who's trying to distract me from winning.  It's also rare that players disconnect when losing.  Learn to set your personal settings, and after one of your games ends, it will email you your game in pgn format so that you can later input your games into a chess playing program and analyze your mistakes.

If you play rated games, you can gauge how you compare to other rated players, and then ask to play others slightly stronger than you, which is a great way to improve.
