    because traditionaly u dip the wrap and contents in

  14. In the pastry that the cabbage, shrimp, beef and carrots are wrapped in.  Sometimes, if you get them from an authentic Chinese (or Asian) restaurant, you'll find a few pieces of fried egg in it.

  22. i actually wondered the same thing until i started making them myself.  my best guess is because there is eggs used in making the roll part and egg whites are used to seal the roll as well.
