  2. Amsterdam?  Hardly off the beaten path.

    I would hit the white towns in Andalucía, or a smaller coastal town.  Toledo, Segovia, less travelled.  Ronda is beautiful!!! And not terribly well known.  We found a room for three there, for under 30€, if that's any indication.  

    Any place in Tuscany would be good.  A couple of little towns that Rick Steves hits on his tour.  

    I found an adorable little town in the Tyrol, long time ago, called Bregenz.  Very undiscovered and quiet.

    Lausanne, in Switzerland, 20 minutes from Geneva, so a lot of the same interests, but no one knows about it, or, for that matter, the friend who lived there took me to Gruyère.  Even more isolated.  GREAT castle there!

    Almost any place that is NOT one of the major cities in Ireland or Scotland.  I would hit Aberdeen and the countryside around there, if I could.

    And pretty much any place in Eastern Europe is going to be mor off the beaten path.   Dalmatian Coast.  I've always wanted to go there.  Romania, Vlad's castle.
