Where is the wildlife in Middle Earth?

I noticed in the movie(s) that there was little or no wildlife. No deer, squirrels, only one rabbit. Where were all the animals. Did the orc's eat 'em all up?

Tom Bombadil (Sir Not Appearing in Steve's LOTR), had them all evacuated to the shores of Harlindon and the nice parts of Gondor *before* the War of the Ring!  It was there, smack dab at the end of the Third Age (3014-3019), that they enjoyed shrimp BBQ and drinks with little umbrellas in them.  They avoided all Orcs, Half Orcs, Dunlanding Berserkers, Goblins, Wargs, Barrow Wights, and Olog-hai Trolls.

They were all scared and hiding, just like on our earth.
