Guatemala, by far.  It is close enough to Canada and the U.S. to be affordable for flying (equidistant from New Orleans to Guatemala City as it is from New Orleans to Boston, MA).  It is far less expensive than other Latin American destinations (say, Mexico, or Costa Rica, for instance).  Also, it has everything from pyramids, to rainforest, to indigenous heritage and culture present almost everywhere, and a sizeable ex-pat community and traveler-friendly atmosphere to make travel within the country relatively easy.
