You should terminate it. Or else go outside the premise and leave it in the open if your are vegetarian. You can keep rice trap and other poison in different location to make a good impression on Food Inspector and give rat free food to your customer

To  your town's Animal Control Department or Department of Health. Rats are disease carriers and can cause difficulty in heavily populated areas! Remember they are rodents and they will multiply! You need to report the fact that your restaurant had a rat! They do bite and could cause serious infections to children especially. Get your restaurant exterminated also and inspected again.! Sounds like you need to clean up your restaurant.
