I need them for baking cookies.

No, I couldn't find them in any of the Monoprix stores.

Are there any specialty shops for baking in Paris?

  1. I'm sure there are baking shops somewhere in Paris, but I can't guide you on where.  Did you try looking at stores other than Monoprix, like G20 or Franchprix?  If all else fails, can you ask in one of the many patisseries if they know where you can get what you need?

    Since this is unknown in French cuisine your best bet is  exotic food stores. If Le Comptoir Colonial is out of crystallized ginger, you may want to try the supermarket in Chinatown:

    Hypermarket Carrefour has quite a good selection of exotic foods so they may have some. The one in Créteil can be reached by the métro, line 8, métro station Créteil Préfecture.

    You may also try "épiceries orientales" (middle-eastern grocery stores) or the food section of the Galeries Lafayette.
