  1. The streams of southern Oregon have alot of crawdads in them.  I have several traps I bait with liver or chicken parts.  The smellier the better.  I can catch half a bucket of them in an afternoon.  Whe nyou cook them, get some Old Bay seasoning and put it in the boiling water.  Boil the dads about 10 minutes. If I were you, I'd try any of the small creeks and feeder streams that empty into the Sacramento River.  You might also try the Delta area.  You can make your oen traps from 1/4" galvanized cloth or buy them ready made from Cabelas etc.  Good luck!
