We had a few lovely vacations at Horseshoe Valley Resort (Carriage Hills Resort, actually) which is either listed in the tiny town of Oro-Medonte, just outside of Barrie.  It is lovely in the fall and winter, in particular, and there's a delightful little restaurant called Loobie's right down the road from the resort.

I'd highly recommend Prince Edward County, which is about 2 hours east of Toronto.

Picton is the main town and is a few minutes away from Sandbanks provincial park which has the best beaches in Ontario.

This area is also a thriving wine region with quaint towns, fantastic restaurants, and great accomodations.

I've stayed at the Huff Estates Vinyard. Reasonable prices, great rooms, 10 minutes from the beach and 2 minutes from an old-fashioned drive-in theatre.
