i'm not sure how it was invented but i heard that the name doesn't come from the sport we now know as water polo.

There was a game they used to play in the pool while balancing on barrels as their steed, and used the necessary sticks and ball to play with hence playing polo in the water = water polo this name was adopted by the more modern sport.
