  1. Mexican: Cumin, cilantro, chili

    Chinese: Ginger, black pepper, garlic

    Italian: Oregano, basil, garlic

  3. Well, for Mexican, you definitely need cumin. Coriander and chili are also probably on the list.

    As for Chinese, I'm not entirely sure. Star anise is one possibility. Ginger is another. Black pepper can also be used heavily in some dishes.

    With Italian, I'm not so sure about spices, but some classic herbs are basil and oregano. Of course, garlic goes well with most of these, too.
