Which SAT II's should I take???? Please help!!!!?

I want to become an actress, but there's also a chance that I want to be either a psychologist or a nurse, so which SAT II's should I take for these careers?

Well, actress and nurse are pretty far apart. However, it's a safe bet if you do a math and a science for psychology or nursing, and I bet theatre schools don't require subject tests (if they do, I bet they aren't specific). All in all, you should take the tests you're confident about.
