  1. The most information bar none is from Egypt. The Egyptians had a civilization long before the Greeks or Romans had one. With the translation of the Rosetta Stone then this literally opened up the whole history of thousands of years of Egyptian history and information. Unlike the other civilizations they kept records a written account in hieroglyphics.


  2. The nature of your question makes it too difficult to answer. If you look for the number of ruins of ancient cultures, we do not have many as such. And recent excavations of American civilizations such as Aztecs, Incas, also should be considered. However, as for as my knowledge goes they are concentrated in a specific spot or area and hence limited. Then you need to consider the excavations of Mayas. I do not think we have too many from the real real ancient greeks or sumerians or mesapotomia or indus valley. They too are limited in number as these three are truly ancient most. Then we have the chinese excavations. I guess perhaps one day the chinese might out number other excavations as there are different excavations going in and around china and old mongolia.

    Now coming to the information I guess the link you have given is a too good. Probably we can check few more official arheological web sites of different countries of today where these civilizations once stood.

Your question has two halves to it, and they have different answers.  The first half is what civilization do we have the most ruins from.  Its not really possible to answer this conclusively, because there are many civilizations (Rome, Greece, Egypt, China, Mesopotamia, Mesoamerica, etc.) that have left a great deal of their material culture behind.  The second half is what we have the most information on.  From a purely written record point of view, the answer is probably Rome, as more of the Romans records have survived than most others.  We have a very complete account of their history written by people who lived at the time, plus literature, letters, and other documents both official and nonofficial which give us a much clearer picture about Rome's history and society.  Other civilizations such as Egypt have left a great amount of their written history behind in the form of tomb paintings, but there are enormous gaps in their history, and while we know much about their culture, a large part of that is educated speculation.
